Authentic-style corn tortilla tacos with fresh cilantro-onion relish

- •½ cup fresh cilantro, chopped
- •1 white onion, finely diced
- •2 lime
- •½ cup salsa verde
- •4 radishes, thinly sliced

- •20 oz can young jackfruit, drained
- •1 tsp smoked paprika
- •1 tbsp chipotle in adobo, minced
- •1 tsp brown sugar

Pulled Pork
- •1 lb pork shoulder, boneless
- •¼ cup orange juice
- •1 tsp dried oregano
- •3 garlic cloves, minced

Prepare the cilantro-onion relish: combine diced onion, chopped cilantro, a squeeze of lime juice, and a pinch of salt. Set aside.

Warm corn tortillas on a dry skillet or open flame until pliable and lightly charred.

Slice radishes thinly for garnish.
Vegan Path

Drain and rinse jackfruit. Shred with two forks to resemble pulled meat. Toss with smoked paprika, chipotle in adobo, and brown sugar.

Cook jackfruit in a skillet over medium heat for 12-15 minutes, stirring occasionally, until edges are caramelized and slightly crispy.

Assemble tacos: fill tortillas with jackfruit carnitas, top with cilantro-onion relish, salsa verde, radishes, and a squeeze of lime.
Omnivore Path

Cut pork shoulder into 2-inch chunks. Season with oregano, minced garlic, salt, and pepper. Sear in a hot skillet until browned on all sides.

Add orange juice, cover, and simmer on low for 45-60 minutes until fork-tender. Shred with two forks and crisp in the pan for 5 minutes.
