- •6 oz rice noodles (banh pho)
- •1 cup bean sprouts
- •¼ cup fresh Thai basil
- •1 lime, quartered
- •1 jalapeño, sliced
- •2 tbsp hoisin sauce (for serving)
- •1 tsp sriracha (for serving)
Vegan Path
Shiitakes + Tofu
- •4 oz shiitake mushrooms, sliced
- •6 oz extra-firm tofu, cubed
Omnivore Path
Thin-Sliced Beef
- •6 oz thinly sliced raw beef sirloin
Instructions
Cook Together

Cook rice noodles per package (about 4 minutes) and divide between two bowls.

Bring the pho broth to a rolling boil in a saucepan.
Vegan Path

Add shiitakes and tofu to the boiling broth and simmer 2 minutes. Ladle over noodles in one bowl. Top with sprouts, basil, jalapeño, and lime.
Omnivore Path

Lay raw beef slices over the noodles in the other bowl. Pour the boiling broth directly over the beef — it will cook in 30 seconds. Top with sprouts, basil, jalapeño, and lime.
