Ingredients

Shared Base

Both partners cook these together

  • 8 small corn tortillas
  • 15 oz can canned refried beans
  • ½ cup jarred salsa verde
  • ¼ cup fresh cilantro
  • ¼ white onion, diced
  • 1 lime

Vegan Path

Soy Chorizo

  • 6 oz soy chorizo (e.g. Soyrizo)

Omnivore Path

Carnitas

  • 8 oz pre-cooked carnitas pouch
  • ¼ cup queso fresco, crumbled

Instructions

Cook Together

    Warm refried beans in the microwave for 90 seconds. Warm tortillas in a dry skillet or wrapped in a damp towel in the microwave.

    Spread each tortilla with refried beans and top with salsa verde.

Vegan Path

  1. 1

    Sauté soy chorizo in a dry skillet for 3 minutes. Spoon onto half the tortillas and top with cilantro, onion, and lime.

Omnivore Path

  1. 1

    Heat the carnitas pouch per package and crisp briefly in a skillet. Spoon onto the other tortillas and top with queso fresco, cilantro, onion, and lime.
