Ingredients

Shared Base

Both partners cook these together

  • 1 8.5 oz microwave jasmine rice pouch
  • 15 oz can canned black beans, drained and rinsed
  • ½ cup jarred salsa
  • 1 cup bagged shredded cabbage slaw
  • 1 avocado, sliced
  • 1 lime

Vegan Path

Seasoned Tofu Cubes

  • 7 oz extra-firm tofu, cubed
  • 1 tsp taco seasoning

Omnivore Path

Rotisserie Chicken

  • 1 cup rotisserie chicken, shredded
  • 2 tbsp sour cream

Instructions

Cook Together

    Microwave the rice pouch per package (about 90 seconds). Warm beans in a bowl with a splash of water for 1 minute.

    Divide rice, beans, slaw, and avocado between two bowls. Top each with salsa and a squeeze of lime.

Vegan Path

  1. 1

    Toss tofu cubes with taco seasoning and sear in a hot pan for 3 minutes (or microwave 60 seconds). Add to one bowl.

Omnivore Path

  1. 1

    Top the other bowl with shredded rotisserie chicken and a dollop of sour cream.
