Hearty, smoky chili loaded with beans, tomatoes, and warm spices

Ingredients
Shared Base
Both partners cook these together
- •15 oz can kidney beans, drained
- •14 oz can diced tomatoes
- •1 cup sweet corn kernels
- •1 green bell pepper, diced
- •1 yellow onion, diced
- •2 tbsp chili powder
- •1 tsp ground cumin
- •3 garlic cloves, minced
Vegan Path
Three Bean Blend
- •15 oz can pinto beans, drained
- •15 oz can black beans, drained
- •1 tsp smoked paprika
Omnivore Path
Ground Beef
- •¾ lb ground beef (85% lean)
- •¼ cup cheddar cheese, shredded
- •¼ cup sour cream

Cook Together

Heat oil in a large pot or Dutch oven over medium heat. Sauté diced onion and bell pepper until softened, about 5 minutes. Add garlic and cook 1 minute.

Stir in chili powder and cumin, cooking 30 seconds until fragrant.

Add diced tomatoes, kidney beans, and corn. Bring to a simmer.
Vegan Path

Add pinto beans, black beans, and smoked paprika to the pot. Simmer for 30-35 minutes, stirring occasionally, until thick and flavors have melded.

Serve the three-bean chili in bowls with crusty bread, avocado slices, and hot sauce.
Omnivore Path

Before adding vegetables, brown ground beef in the pot, breaking into small pieces. Drain excess fat, then continue with onion and peppers.

Simmer for 30-35 minutes until thick and rich. Serve topped with shredded cheddar, a dollop of sour cream, and sliced green onions.
